Bunny's tasty chicken tika masala

This recipe is a classic Indian chicken and tomato cream sauce dish that has wide appeal to North American palates. If you are a hungry programmer like myself, you will probably eat at least 2-3 servings of this in one sitting. It is very tasty.

Primary Ingredients

  • 3 boneless skinless chicken breasts cut into bite size pieces
  • Basmati rice

Marinade Ingredients

  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoon cinnamon
  • 2 teaspoons cayenne pepper
  • 2 teaspoons fresh ground black pepper
  • 1 tablespoon minced ginger
  • 1 teaspoon salt

Sauce

  • 1 tablespoon butter
  • 1 clove garlic, minced
  • 1 jalapeño pepper, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons paprika
  • 8oz tomato sauce
  • 1 cup heavy cream
  • ¼ cup chopped cilantro for garnish

Directions

  1. Add chicken and marinade to large ziplock bag and mix well. Marinade at least one hour, preferably overnight.
  2. Preheat grill on high. Lightly grill. Skewer chicken and grill until juices run clear (about 5 minutes per side).
  3. Melt Butter in large skillet on medium heat. Sauté garlic and jalapeño 1 min. Add spices.
  4. Stir in tomato sauce and cream. Simmer on low until sauce thickens, about 20 minutes.
  5. Add chicken and simmer about 10 minutes. Serve over rice and garnish with cilantro.

This is a delightful dish full of yumminess. I recommend that everyone try it! This dish can also be pre-made in marinade and frozen for a quick meal, or you can cook it and freeze with rice to make a nice easy microwave meal.
