Bunny's tasty chicken tika masala

This recipe is a classic Indian chicken and tomato cream sauce dish that has wide appeal to North American palates. If you are a hungry programmer like myself, you will probably eat at least 2-3 servings of this in one sitting. It is very tasty.
Primary Ingredients
- 3 boneless skinless chicken breasts cut into bite size pieces
- Basmati rice
Marinade Ingredients
- 1 cup plain yogurt
- 1 tablespoon lemon juice
- 2 teaspoons ground cumin
- 1 teaspoon cinnamon
- 2 teaspoons cayenne pepper
- 2 teaspoons fresh ground black pepper
- 1 tablespoon minced ginger
- 1 teaspoon salt
Sauce
- 1 tablespoon butter
- 1 clove garlic, minced
- 1 jalapeño pepper, minced
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 8oz tomato sauce
- 1 cup heavy cream
- ¼ cup chopped cilantro for garnish
Directions
- Add chicken and marinade to large ziplock bag and mix well. Marinade at least one hour, preferably overnight.
- Preheat grill on high. Lightly grill. Skewer chicken and grill until juices run clear (about 5 minutes per side).
- Melt Butter in large skillet on medium heat. Sauté garlic and jalapeño 1 min. Add spices.
- Stir in tomato sauce and cream. Simmer on low until sauce thickens, about 20 minutes.
- Add chicken and simmer about 10 minutes. Serve over rice and garnish with cilantro.
This is a delightful dish full of yumminess. I recommend that everyone try it! This dish can also be pre-made in marinade and frozen for a quick meal, or you can cook it and freeze with rice to make a nice easy microwave meal.
